Apple crumble slice

  • 1 cup rolled oats (or quinoa flakes for gluten free)

  • 1/2 cup wholemeal flour (or gluten free flour)

  • 1/3 cup extra virgin olive oil

  • 3 tbsp rice malt syrup

  • 4 apples, diced

  • 1 tbsp brown sugar

  • 1/2 cup shredded coconut

  • 1/2 cup rolled oats (or quinoa flakes for gluten free)

  • 1 egg

  • 2 tbsp rice malt syrup

  1. Preheat oven to 180c. Blend the oats in a blender or food processor for a few seconds (it shouldn’t be completely fine like flour)

  2. In a bowl, mix together the oats, flour, oil and rice malt syrup. Press the mixture into a lined slice tin and bake for 12 minutes.

  3. Meanwhile, put the apples and brown sugar in a large saucepan over medium heat with the lid on and cook for 15 minutes or until the apples are very soft. Then, take the lid off and cook for a further 5 minutes or until the water from the apples has evaporated

  4. Pour the apple mixture over the base.

  5. Mix the topping ingredients together in a bowl. Sprinkle the topping over the slice. Bake for 12-15 minutes.

  6. Allow the slice to cool in the tin before slicing.
