Broccoli, Zucchini & Chicken Fritters

These Broccoli, Zucchini & Chicken Fritters aren’t your average fritters! They are the perfect combination of crispy and tender, with a whole lot of flavour to match.

 

Best of all, they only need one bowl to mix (meaning very little mess) and they are super versatile, as they can be eaten on their own, with a salad on the side or as a patty for a burger!

 

Makes 15 fritters – Serves 5 (3 per serve)

Ingredients:

 

Fritters:

  • 1 medium head broccoli, chopped into florets

  • 1 Zucchini

  • 500g chicken breast, cut into 1×2 cm pieces

  • 1/2 cup wholemeal flour

  • 1/4 cup parmesan cheese, grated or shredded

  • 3 eggs

  • 2 garlic cloves, minced

  • 1/4 cup mint

  • 1 sprig of green onion, chopped finely

  • 1/2 tsp salt

  • 1/2 tsp pepper

 

To cook:

  • 2 Tbsp extra virgin olive oil

 

To serve:

  • 1/2 cup greek yoghurt

  • 1 tbsp lemon juice

  • 2 Tbsp green onion, chopped finely

  • Dash of paprika

 

Method:

  • Preheat oven to 100 degrees celsius

  • Steam broccoli florets lightly, roughly chop into smaller pieces.

  • Add all remaining fritter ingredients into a medium bowl and mix well, add broccoli once cooled.

  • Add olive oil to a pan and heat to medium-high.

  • Dollop small ladles of the mixture into the pan, patting down

  • Cook and flip when ready, and cook until deep golden and cooked through (open one up if needed)

  • Transfer to a wire rack and place into the oven to keep and safe to eat.

  • Serve with yogurt, lemon juice, paprika & green onion on top.

  • Serve & enjoy!
