Serves 5

Ingredients:

1 cup pumpkin, diced
-
500g chicken breast, diced
-
2 tsp Cajun spice
-
250g fettuccine (or GF pasta)

2 tsp extra virgin olive oil
-
1 tsp garlic
-
2/3 cup milk
-
½ cup parmesan cheese
-
¼ cup pasta water
-
140g baby spinach
Method:

In a small pan boil the pumpkin until soft, and then mash until smooth.

Meanwhile, heat a large pan over medium heat. Add the olive oil and garlic

Add the chicken and Cajun spice to the pan and cook for 5-8 minutes or until the chicken is browned.

Boil a large pan of water and cook the pasta according to packet instructions

Add the milk, parmesan, pasta water, mashed pumpkin and baby spinach to the pan. Cook until the spinach is wilted.
