Chocolate Zucchini Muffins
These Chocolate Zucchini Muffins are rich, delicious and have an amazing moist chocolatey texture!
They’re absolutely perfect for sneaking some veggies into a chocolate lover!

Ingredients:

1 ¼ cups plain flour
-
1/3 cup cacao powder
-
1 tsp baking powder
-
¼ tsp salt
-
1 medium zucchini
-
1 egg
-
2 tbsp olive oil
-
1/2 cup maple syrup
-
½ cup milk
-
1 tsp vanilla
-
½ cup choc chips
Method:

Preheat an oven to 180c

Sift the flour, cacao powder, baking powder, and salt in a large bowl.

Grate the zucchini and squeeze out the excess water
-
In a small bowl whisk together the egg, olive oil, maple syrup, milk, vanilla and zucchini. Make a well in the centre of the dry mixture and add the egg mixture in. Mix until just combined and then mix in the chocolate chips

Pour the mixture into 12 lined or greased muffin tins and bake for 22 minutes
