Easy Roast Chicken Tray Bake

We get it, sometimes you just really do not want to cook, and having a bank of quick and easy recipes like this will save you from ordering a perhaps less nutritious dinner option
Serves 4

Ingredients:

2 medium potatoes, cut into chunks

1 medium sweet potato, cut into chunks

1 tsp extra virgin olive oil
-
3 tsp Morrocan spice
-
2 zucchinis, sliced into 2cm thick slices

2 chicken breasts (500g)
Method:

Preheat oven to 200c.

Line a baking tray with baking paper. Add the potato, sweet potato, oil and spice to the tray and gently mix together. Bake for 25 minutes.

Add the chicken and zucchini to the tray and cook for 15-20 minutes, or until the chicken is cooked through
