2 medium potatoes, cut into chunks
1 tsp butter
2 x 120g salmon fillets
Sprinkle of salt
Sprinkle of pepper
2 x steam fresh packets of green vegetables or 300g of mixed frozen vegetables*
(*for low fodmap, use 150g carrot and 150g broccoli florets)
Add the salt and pepper into a large frying pan over medium heat. Once hot add the salmon fillets to the pan and cook for 4-5 minutes on each side or until cooked to your liking
Combine the potatoes and butter in a microwave-safe bowl and cook on high in the microwave for 5 minutes. Then, cook the vegetables for 3 minutes
Combine the salmon, potato and vegetables in 2 bowls and serve
