Garlic and Lemon Baked Salmon

An easy and healthy one-tray dinner. Swap out the vegetables for any that you have on hand to make it even more versatile
Serves 2

Ingredients:

2 110g salmon fillets
-
2 medium potatoes (322g total)

1 bunch broccolini
-
1 bunch asparagus
-
2 tsp extra virgin olive oil

1/4 tsp salt
-
1/4 tsp pepper
-
1/3 cup lemon juice
-
4 garlic cloves, crushed and diced
-
1/2 bunch fresh parsley, chopped
Method:

Preheat an oven to 200c.

Cut the potatoes into wedges and mix with 1 tsp of the olive oil, 2 cloves of garlic and the salt and pepper in a large bowl.

Line a baking tray with baking paper, add the potatoes and bake for 15 minutes.

Meanwhile, combine the remaining olive oil, and garlic with the lemon juice and parsley in the mixing bowl and add the salmon, asparagus and broccolini. Mix well and add to the potato tray (once the 15 minutes is up) and bake for a further 10 minutes.

One cooked, divide everything in half and serve
