Healthy Granola Recipe



Dry Ingredients:

  • 4 cups traditional rolled oats

  • 1 cup flaked coconut

  • 1 cup chopped raw nuts/seeds of your choice (eg. almonds, brazil nuts, walnuts, pecans, pepitas sunflower seeds, chia seeds, hemp seeds)

  • 1/2 cup dried fruit of your choice (eg. chopped dates, apricots, apples, pineapple, blueberries, sultanas, goji, currants, cranberries)

  • 1 tsp your favourite spice mix (eg. cinnamon, nutmeg, cardamom, ginger, orange zest, lemon zest)

  • 1 pinch salt


Wet ingredients:

  • 1/3 cup sweetener (eg. honey, maple syrup, rice malt syrup)

  • 1/3 cup oil (eg. extra virgin olive oil or coconut oil are best)

  • 1 1/2 tsp flavouring (eg. vanilla extract, almond essence, coffee extract, orange blossom)

  • 2 egg whites

  • Preheat the oven to 160 degrees celsius. Line 2 large baking trays with baking paper.

  • Combine all dry ingredients, except the dried fruit.

  • Combine all wet ingredients, excluding egg whites.

  • Whisk egg whites with an electric whisk until white and foamy.

  • Mix the wet a

  • nd dry ingredients together in a large bowl, until well incorporated, then fold through the egg whites.

  • Spread granola evenly between the trays, pressing down slightly.

  • Make a hole in the centre, like a doughnut, to allow the granola to cook evenly.

  • Bake for 20-30 m

  • inutes, checking regularly until golden. Do not mix the granola!

  • Remove from the oven and leave the granola to cool, allowing the granola to clump together and firm up.

  • Once cooled completely, break into clusters, and store in an airtight container for up to one week.
