It’s no secret that we love quick and easy recipes and this Greek Chicken Grain Bowl is a perfect meal prep friendly, grab and go style lunch or dinner!
If you’re a hungry human or are needing extra carbs for your training you can bulk it up with extra grains and of course, add in any extras like red onion, olives, parsley etc.

½ cup freekeh (or other grain)
400g chicken breast, cut into 4 pieces
Salt and pepper
250g cherry tomatoes, quartered
2 Lebanese cucumbers, diced
2 cups rocket
1 tbsp olive oil
1 lemon, juiced
3 tbsp plain Greek yoghurt
40g feta, crumbled
1. Combine the freekeh with 1 cup of water in a small saucepan and bring to a boil. Once boiling reduce to a simmer and continuing cooking until the water has evaporated
2. Heat a non-stick frying pan over medium heat. Once hot add the salt and pepper to the pan, then the chicken breast. Cook for 6-8 minutes on each side or until cooked through
3. Combine the lemon juice and Greek yoghurt in a small bowl and set aside.
4. Divide the freekeh, chicken, cherry tomatoes, cucumbers and rocket between 4 bowls. Top with the Greek yoghurt dressing and feta.
