Lemongrass Chicken Banh Mi
A delicious take on a Banh Mi – This is a perfect option for your next picnic, work lunch or post-workout meal!
It is a super fresh and fun way sandwich-style option to add to your day!
We used toppings like pickled ginger, chilli and fresh herbs to really bring this meal to life!

Ingredients

1 small raw chicken breast (approx 110g)

2 tsp Five Tastes Stir Fry Shot – Lemongrass & Kaffir Lime

1 tsp reduced-sodium soy sauce
-
1 tsp sesame oil
-
1 close garlic
-
1 cup leafy greens
-
1/4 capsicum, sliced thinly
-
1/4 cucumber, sliced thinly
-
1 Tbsp pickled ginger
-
1 tbsp Heinz light mayonnaise
-
1 tsp fresh chilli, cut into thin slices

1/3 long baguette
-
1/4 cup fresh coriander/mint
Prepare:

Mix together the stir-fry shot, soy sauce, sesame oil, garlic in a bowl. Cut chicken into 3x3cm pieces and marinate in sauce for 5 minutes. Heat up a pan or grill on medium/high heat nd cook in a spray of olive oil until cooked through.

Cut baguette longways and toast under a grill for 2 minutes.

Add all ingredients to the inside of the baguette.
