Mediterranean Rice Salad with Halloumi or Chicken
This tasty salad is sure to freshen up your day and will help to keep you fuller for longer, as it contains a good source of protein and fibre!
This salad makes a perfect lunch, dinner or meal prep option, and is a SERIOUSLY DELICIOUS way to elevate your salad game!

Ingredients:
Salad:

3 cups cooked brown rice, cooled

2 large tomatoes, diced

2 cucumbers, diced
-
1/2 red onion, diced
-
1/2 capsicum, diced
-
1/2 cup strong cheese (e.g. parmesan, fetta, goats cheese), crumbled
-
2 cups tightly packed rocket, roughly chopped
-
2 cups tightly packed baby spinach, roughly chopped
-
1/3 cup coriander leaves, roughly chopped
-
1/3 cup fresh mint leaves, roughly chopped
-
1/3 cup toasted nuts (e.g. pine, almond, walnut, pistachio)
-
200g halloumi (sliced & grilled) or 200g raw chicken breast (tossed in paprika, salt & pepper then grilled)
Dressing:
-
3 tbsp fresh lemon juice
-
3 tsp extra virgin olive oil
-
2 garlic cloves, minced
-
1 tsp Dijon mustard
-
1/2 tsp salt
-
1/2 tsp cracked pepper
Method:

Cook halloumi or chicken as desired
-
Place all ingredients for dressing into a jar, screw the lid on tight and shake well

Place all salad ingredients in a large bowl. Drizzle dressing over salad & toss well.

Serve a quarter portion into a serving bowl, and if using Halloumi, pile on top.
