Mediterranean Rice Salad with Halloumi or Chicken

This tasty salad is sure to freshen up your day and will help to keep you fuller for longer, as it contains a good source of protein and fibre!

 

This salad makes a perfect lunch, dinner or meal prep option, and is a SERIOUSLY DELICIOUS way to elevate your salad game!

Haloumi Salad

Ingredients:

 

Salad:

  • 3 cups cooked brown rice, cooled

  • 2 large tomatoes, diced

  • 2 cucumbers, diced

  • 1/2 red onion, diced

  • 1/2 capsicum, diced

  • 1/2 cup strong cheese (e.g. parmesan, fetta, goats cheese), crumbled

  • 2 cups tightly packed rocket, roughly chopped

  • 2 cups tightly packed baby spinach, roughly chopped

  • 1/3 cup coriander leaves, roughly chopped

  • 1/3 cup fresh mint leaves, roughly chopped

  • 1/3 cup toasted nuts (e.g. pine, almond, walnut, pistachio)

  • 200g halloumi (sliced & grilled) or 200g raw chicken breast (tossed in paprika, salt & pepper then grilled)

 

Dressing:

  • 3 tbsp fresh lemon juice

  • 3 tsp extra virgin olive oil

  • 2 garlic cloves, minced

  • 1 tsp Dijon mustard

  • 1/2 tsp salt

  • 1/2 tsp cracked pepper

 

Method:

  • Cook halloumi or chicken as desired

  • Place all ingredients for dressing into a jar, screw the lid on tight and shake well

  • Place all salad ingredients in a large bowl. Drizzle dressing over salad & toss well.

  • Serve a quarter portion into a serving bowl, and if using Halloumi, pile on top.

  • Serve & enjoy!
