Ingredients

  • 100g butter

  • 4 tablespoons maple syrup

  • 1 tablespoon of light brown sugar

  • 1 teaspoon vanilla bean paste

  • Pinch of cinnamon & nutmeg

  • ½ teaspoon salt

  • 140g (1 cup) mixed nuts eg hazelnuts and pistachios

  • 150g (1 cup) sunflower seeds

  • 200g (2 cups) gluten-free rolled oats or quinoa flakes

  • 50g dark chocolate chips

 

Method:

  1. Preheat the oven to 180c. Line two baking trays with baking paper.

  2. Melt the butter and mix it with the maple syrup, sugar, vanilla bean paste, salt, cinnamon & nutmeg.

  3. Mix the nuts, seeds and oats together in a large bowl. Pour the butter mixture over the top stirring well to combine.

  4. Divide the mixture between the two lined trays and place in the oven for 10 minutes

  5. After 10 minutes, swap the trays from top to bottom, rotate them and use a large spoon to gently mix the granola. Cook for another 10 minutes.

  6. Allow the granola to cool for about 15minutes before tossing through the chocolate chips. They will melt slightly and form delicious chunks of chocolate and granola.

  7. Serve with milk or Greek yoghurt.
