Pulled Chicken Tacos

Healthy pulled chicken tacos recipe

Ingredients:

  • 1 tbsp garlic infused olive oil

  • 500g chicken breast, cut into strips

  • 1 tbsp paprika

  • 1 tsp chilli flakes

  • 1 x 400g can diced tomatoes

  • 200g cherry tomatoes, sliced

  • 8 small corn tortillas

  • 100g red cabbage, shredded

  • ½ avocado, sliced

  • 1 lime, cut into 8

  • Coriander leaves, to serve

 

Method:

  1. Add 1 tsp of the olive oil to a frying pan over medium heat. Once hot add the chicken, paprika, chilli, tinned tomatoes, cherry tomatoes and 1/2 cup water. Bring the pan to a simmer and cook for 20 minutes. Then, remove from the heat and using two forks pull the chicken apart

  2. Using the remaining oil in a new pan over medium heat, heat the tortillas.

  3. Divide the cabbage, and pulled chicken between the tortillas and top with the avocado, coriander and a slice of lime
