Roasted Cauliflower, Corn & Chickpea Tacos w/ Mango Salsa

These tacos are a perfect summer day meal! Now that mangoes are in season, you have no excuse not to try out this recipe! 🌮

Cauliflower tacos

Ingredients:

Cauliflower Chickpea Mix
1/2 head cauliflower, cut into medium florets
1 can chickpeas, rinsed and drained thoroughly
1 cob of corn, kernels cut away from the cob
2 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
Zest of 1 lime
Salt & cracked pepper
1 Tbsp extra virgin olive oil
Mango Salsa
1 calypso mango, peeled and diced
1/2 red capsicum diced
1 small jalapeño, finely diced
Juice of 1 whole lime
1/4 cup fresh coriander, torn into pieces or chopped
1 whole avocado
4 Tbsp Greek yogurt (or DF option)
Salt & cracked pepper
9 small corn (GF option) or flour tortillas, warmed
 

Method:

  1. Preheat oven or to 180 degrees Celcius (or skip this step if using an air-fryer).
  2. Line trays with baking paper
  3. Combine all herbs in a small bowl, mixing well. In a large bowl, add in cauliflower, corn, and chickpeas, combined with the olive oil, and coat thoroughly. Add spice mix to the cauliflower, corn, and chickpeas, and toss to ensure they are fully coated.
  4. Spread this mixture evenly onto the baking trays, ensuring the pieces arent overlapping. Roast in the oven for 30 minutes (or in the air-fryer for 15 mins, with 2 separate batches) tossing once halfway through.
  5. Meanwhile, prepare mango salsa by combining all ingredients in a large bowl.
  6. Begin assembling by filling each tortilla with cauliflower, corn, and chickpea mixture, topped with the mango salsa, avocado, greek yogurt, lime juice & coriander. Best enjoyed with friends!
