Teriyaki Tofu Rice Bowl

Ingredients:

  • 1 cup rice

  • 400g tofu, cut into 2cm cubes

  • ¼ cup cornflour

  • 1 tbsp olive oil

  • 1 tsp minced ginger

  • 2 tbsp mirin

  • 2 tbsp reduced-salt soy sauce

  • 1 tbsp brown sugar

  • 1 tsp sesame oil

  • ½ cup water

  • 2 small bok choy, roughly chopped

  • 350g Coles or Woolworths superfood vegetable mix

 

 

 

Method:

  1. Cook the rice according to the packet instructions

  2. Pat dry the tofu and place it in a bowl with the corn flour to coat.

  3. Add the olive oil to a large frying pan over medium heat. Once hot add the tofu and fry for 4-5 minutes until golden on all sides. Then, remove from the pan

  4. Add the ginger, rice mirin, soy sauce, brown sugar, sesame oil and water to the pan and bring to a simmer. Add the bok choy to the pan and cook for 2 minutes, then add the tofu and toss together.

  5. Divide the rice, vegetable mix, and tofu between 4 bowls and enjoy
