Tofu and Broccoli Soba Noodle Stir Fry

Tofu and broccoli soba noodle stir-fry recipe

Ingredients:

  • 500g tofu, cut into cubes

  • 2 1/2 tbsp kecap mains (sweet soy sauce)

  • 1 small chilli, deseeded and finely chopped

  • 1 garlic cloves, finely chopped

  • 1 1/2 tbsp ginger, finely chopped

  • 1/2 tbsp sugar or honey

  • Juice of 2 limes

  • 150g soba noodles

  • 1 broccoli head, cut into florets

  • 500g mushrooms, quartered

Method:

  1. Combine the kecap manis, chilli, garlic, ginger, sugar, and lime juice in a bowl. Add the tofu to the bowl and coat in the marinade.

  2. Heat a large frying pan over medium heat. Once hot add the tofu and marinade and cook for 2 minutes. Then add the broccoli and mushroom and cook for a further 4-5 minutes.

  3. Meanwhile, add the noodles to a large bowl and cover with boiling water. Once the noodles are tender, drain the water and add the noodles to the pan. Toss to combine and divide into 4 bowls.
