Vietnamese Caramelised Pork Salad

A light but flavoursome Asian style salad! Perfect for meal prep, summer nights and light lunches

 

If you’re not a fan of pork you could use beef, chicken or tofu

Vietnamese Caramalised Pork Salad Recipe

 

Ingredients:

  • 500g pork fillet

  • 4 tbsp soy sauce

  • 4 tbsp teriyaki sauce

  • 2 tbsp fish sauce

  • 2 tsp brown sugar

  • 2 tsp minced garlic

  • 1 tsp minced ginger

  • 1 tsp minced lemongrass

  • 150g vermicelli noodles

  • 350g Superfood Vegetable Mix

 

Method:

  1. Combine the soy sauce, teriyaki sauce, fish sauce, brown sugar, garlic, ginger and lemongrass in a bowl. Add the pork fillets to the bowl, coat in the marinade and allow to marinate in the fridge for at least 30 minutes

  2. Heat a frying pan over medium heat. Add the pork fillets and marinade to the pan and cook for 6-8 minutes on each side and then slice into strips

  3. Meanwhile, cook the vermicelli noodles according to the packet instructions. Mix the noodles with the Vegetable Mix and top with the pork. Divide into bowls
